1. Lemon and Honey Dressing
You will need:
- 2 tablespoons of honey
- 4 tablespoons of lemon juice (freshly squeezed)
- 2 tablespoons of English mustard
- 150 ml (five fl. oz.) of olive oil
- Salt & pepper
Pour the lemon juice in a small bowl. Add the honey, mustard, salt and pepper (to your taste). Whisk it together. Finally add the olive oil and whisk again.
You can keep this dressing in the refrigerator for a week.
This dressing is great with a chicken salad.
2. Austrian Salad Dressing
You will need:
- 4 tablespoons of white wine vinegar
- 3 tablespoons of caster sugar
- 2 teaspoons of salt
- 1/2 teaspoon of pepper
- 200 ml (6.5 fl. oz.) of water
Pour the vinegar directly into your salad bowl and add the sugar, salt and pepper. Give it a quick whisk before adding the water. Whisk it until you get a nice and smooth texture.
This dressing goes very well with green salad or a cucumber salad.
3. Balsamic and Honey Vinaigrette
You will need:
- 3 tablespoons of Balsamic vinegar
- 6 tablespoons of olive oil
- 2 tablespoons of honey
- Salt & pepper
In a small bowl mix the Balsamic vinegar, honey, salt and pepper (to your taste). Add the olive oil and whisk it until you get a smooth texture.
This dressing is ideal with a warm chicken or mixed salad.
4. Fresh Lime Salad Dressing
You will need:
- 2 limes
- 6 tablespoons of olive oil
- Salt & pepper
Grate the zest of one lime into a bowl. Add the juice of both limes, salt and pepper (to your taste). Whisk it together. Finally add the olive oil and whisk again until you get a nice and smooth texture.
Nice dressing for a green salad with tomatoes and feta cheese.
5. Delicious French Dressing
You will require:
- 1 tablespoon of French mustard
- 1 tablespoon of lemon juice
- 2 tablespoons of white vinegar
- 6 tablespoons of olive oil
- Salt & pepper
In a small bowl, mix together the French mustard, lemon juice and vinegar. Then whisk in the olive oil until you get a nice and smooth texture. Add salt and pepper (to your taste).
This dressing is perfect for a green salad with croutons.
6. Sage and Fennel Dressing
You will require:
- Half a fennel
- 1 tablespoon of lemon juice
- 4 tablespoons of Balsamic vinegar
- 150 ml (5 fl. oz.) of olive oil
- 1 tablespoon of dried sage
- Salt & pepper
Cut your 1/2 of fennel in very small dices and put them in a small bowl. Add the Balsamic vinegar, lemon juice, sage, salt and pepper (to your taste) and mix it together. While mixing gently pour in the olive oil.
This dressing is amazing with grilled or barbecued eggplants or peppers.
7. Ginger & Balsamic Vinegar Dressing
You will need:
- 2 tablespoons of freshly grated ginger
- 1 teaspoon of sugar
- 2 teaspoons of Balsamic vinegar
- 5 tablespoons of vegetable oil
- 1 teaspoon of Salt & 1/2 teaspoon of pepper
- 2 tablespoons of freshly chopped coriander (optional)
Mix in a small bowl the ginger, Balsamic vinegar, sugar, salt and pepper. Continue whisking while you pour in the olive oil. Finally, add the coriander. Leave it to rest for an hour before dressing your salad.
This dressing goes well with Asian salads.
8. Fresh Herbs Vinaigrette
You will need:
- 1 teaspoon of finely chopped parsley
- 1 teaspoon of finely chopped chives
- 1 teaspoon of finely chopped of tarragon
- 1 tablespoon of lemon juice
- 1 tablespoon of cider vinegar
- 6 tablespoons of olive oil
- Salt & pepper.
Mix in a bowl all the herbs, the lemon juice, vinegar and salt & pepper (to your taste). While whisking, pour the olive oil in.
This is a refreshing dressing that goes well with many summer salads.
9. Shallot Vinaigrette
You will need:
- 1 Shallot
- 2 tablespoons of white wine vinegar
- 4 tablespoons of sunflower oil
- 1 teaspoon of French mustard
- 1 pinch of salt
- 1/2 teaspoon of pepper
Mix the mustard, vinegar, salt and pepper. Add the oil and whisk until you get a smooth texture. Chop the shallot into small dices and at it to your dressing.
This dressing is great with both green and mixed salads.
10. Yoghurt and Lemon Salad Dressing
You will require:
- 4 tablespoons of yoghurt
- 1 teaspoon of French mustard
- 1 tablespoon of lemon juice
- 1 tablespoon of vinegar (of your choice)
- 1 talespoon of olive oil
- 1 tablespoon of finely chopped parsley
- Salt & pepper
Mix in a bowl the mustard, lemon juice and vinegar. Add the olive oil. Slightly whisk the mixture and add the yoghurt. Add the parsley, salt and pepper (to your taste).
You can use low-fat yoghurt to obtain a very light salad dressing.
