5 TouchDown Appetizers


I'm a Wisconsin indigenous, so of course I bleed eco-friendly & gold (if I'm not bleeding red for the Badgers!) but even if you're not normally a fan of the Pack, you can't have been oblivious to their AMAZING season. Rodgers and his team have had their game faces on, and it's been a magical season. I am banking on them at least getting into the Superbowl- and I really hope they win. Regardless, I'll be watching the big game, because I like football. Also, it's a fun time to get everyone together to hang out. When you're cheering the Pack on to their victory, you could serve these tasty, amazing and easy appetizers!



Go Nutty



Why do bars always have nuts available? Because they go great with beer! Also, they're a great finger food, and oh-so-tasty. Here's an excellent recipe for Sugared Pecans


What You'll Need:
4 eggs
1/2 cup of ginger ale
2 tablespoons of salt
2 tablespoons of cinnamon
1 tablespoon of ground ginger
2 cups of sugar
8 cups of pecans


What You'll Do:
Preheat the oven to 250 degrees
Separate the egg whites from the rest of the egg and whisk
Then add the dry ingredients (excluding the pecans) until well mixed
Finally stir in the pecans a cup at a time (to keep stirring easy) until all of the pecans are evenly coated in the mixture
Spray two cookie sheets with non-stick spray and spread evenly across the pans
Bake for 1 to 1.5 hours or until the pecans appear dry, stirring occasionally so they do not stick together as much
Cool then separate any clumps by hand.


Enjoy this sweet and savory, easy finger food. First & ten!



Drunkard's Favorite



I came up with this in college, thanks to my own escapades when I realized drunken friends need comfort food. What's more comforting than chocolate chip cookies? However, if you are inebriated, you should NOT be using an oven. Thus, these Drunkard's Favorite Cookie was born.


What You'll Need:
Cookie Dough ( use your own favorite recipe, or pick up the frozen kind for quicker production)
2 bags of semi-sweet chocolate chips (or white chocolate, or any kind of chip you like)
Sprinkles (and lots of them!)


What You'll Do:
Roll dough into 2 inch balls (like you were going to bake them)
Melt chips in a double boiler until creamy
Dip the balls into the chocolate (use a skewer to coat them fully, or just dip half)
The dip the balls into the sprinkles ( or pour the sprinkles over the ball to prevent the chocolate from saturating sprinkles)
Place on a cookie sheet and put in the freezer for 2 hours, or overnight is best


Get creative and use whatever sweet treats you like. Once we dipped the balls in melted peanut butter and then chocolate, and it was HEAVEN


Serve these at your party and the sweet-tooths will be satisfied and it might even sober up your sloppy drunk friend.



Refresher Anyone?



Superbowl parties tend to be about the beer and the wings, and all these heavy foods that sit in your belly and make you sleepy by half time. Here's a way to lighten the load, and remain absolutely tasty. Best of all, it's easy (I really like that!) But it's refreshing, healthy, and puts new spin on an old Superbowl tradition- chips and salsa. Try Cucumber Melon Salsa!


What You'll Need:
3 mangoes, skinned, seeded and medium diced
1 large cucumber, skinned and medium diced
2 jalapeno peppers, seeded (to keep the spice to a minimum) and finely diced
1 minced clove of garlic
1 medium sweet onion, finely diced
1/2 cup fresh cilantro, chopped
lime juice, salt and pepper to taste


What You'll Do:
Mix all the vegetables together
Season with juice, salt and pepper
Refrigerate at least two hours before serving


This salsa is not too spicy, but it is chunky, fresh and most certainly tasty. No personal fouls allowed here!



The Slam Dunk of Football



Okay, I know there is no such thing, but your guests will think so when you serve them this Mexicana twist of flavors. It's a simple dish, but creative and cute. Is it a taco? Is it a quesadilla? It's just delicious! Make sure to add these Roll Ups to your football menu!


What You Need:
20 corn tortillas (the recipe calls for flour, but corn is WAY better, and more authentic!)
1 cup of sour cream
8 oz of softened cream cheese
1/2 cup of shredded Cheddar cheese
1/2 cup of diced green onions
lime juice to taste
diced jalapeno peppers to taste
1 jar of picante sauce, or your favorite tomato based salsa


What You'll Do:
In a bowl mixes the cheeses, sour cream, eco-friendly onions, lime juice and jalapenos until they are evenly mixed
Use a knife to spread the mixture across the one side of the tortillas. Roll into tight spirals and cover with plastic wrap
Refrigerate for an hour before serving with the jar of picante or salsa


This is super yummy and easy. You'll really like the cheesy mixture and the tortillas are the perfect bread to calm your Superbowl nerves. Don't worry, the Pack always pulls through!



Indulge Your Inner Child



When our team loses, we want to stop and cry and scream. The other team cheated! The refs were bad, the weather was too cold to really be playing. Instead of throwing a temper tantrum , or calming down the mass of instant- 2-year-olds in your living room, offer them this sweet treat which will indulge the inner child, and hopefully satisfy them so they stop throwing pillows at your TV. The Chocolate Banana Milkshake is the answer to all your woes!


What You Need:
2 bananas
3 scoops of chocolate ice cream
2 cups of chocolate milk
4 tablespoons of chocolate syrup


What You'll Do
Combine all the ingredients in the blender until smooth and creamy
Serve in funky glasses (I really like the look of martini glasses) with a dollop of whip cream on top



This recipe requires the least amount of effort, and is my personal favorite. It's so delicious and I do adore them in martini glasses- they look so posh, which my girlfriend's like and the guys enjoy how thick and creamy it is. Win, win, win!
